I love when dinner can be cooked together. Instead of worrying about timing multiple dishes to be done at the same time, I can pop it all into the oven and then watch TV until I hear a timer ding. I think the only dinner scenario better than that is the one where I don’t have to cook at all.

Food just magically appears in front of me while I sit on the couch.

Sausage & Veggies

1 lb. smoked sausage links
4 large thin-skinned potatoes
1 of each bell pepper variety –
yellow, orange, green, red
1 small onion
1 head broccoli
8 ounces fresh green beans
8 ounces fresh asparagus
Olive oil
1 TBSP minced garlic
2 tsp oregano
2 tsp parsley
Salt & pepper to taste

Cutting board and knife
Large bowl
Baking pan lined with aluminum foil or parchment paper

Preheat oven to 400 degrees.
Chop the veggies, sausage, and potatoes into bite-sized pieces.
Toss into large bowl and add garlic, oregano, parsley, salt, and pepper.
Add enough olive oil to give all the ingredients a light coating.
Spread into an even layer on baking pan.
Bake for 15 minutes and then stir well. Return to oven for 15 minutes or until veggies are tender.

Superhero Tip: Sprinkle parmesan over the top once it is out of oven.

Second Superhero Tip: You can change up this dish easily by adjusting the type of sausage and veggies you mix together.
