You’re still reading? Ok, I see one of us has to be the adult in this situation so I’ll stop typing. Now you won’t be compelled to keep reading and you can bake yourself a cookie.
Chocolate Cappuccino Cookies
1/3 cup butter, softened
1 cup brown sugar
2/3 cup cocoa powder, unsweetened
1 TBSP instant coffee grounds
1 tsp baking soda
1 tsp cinnamon
2 egg whites
1/3 cup vanilla yogurt
1 1/2 cups flour
1/2 cup granulated sugar
Stand mixer with paddle attachment
Wire cooling rack
Preheat oven to 350 degrees.
Beat butter and brown sugar until creamy.
Add cocoa powder, coffee grounds, baking soda, and cinnamon.
Mix until well combined, scraping sides of bowl as needed.
Beat in egg whites and yogurt, then add flour slowly until fully combined.
Roll dough into balls. Drop them into granulated sugar and coat.
Place dough onto baking sheet, 2 inches apart.
Bake for 8-10 minutes, until edges are firm. Cool on wire rack.
Superhero Tip: Add more coffee to amp up the flavor!
