Brownies are delicious, but every so often you need to mix it up to avoid dessert boredom. Thus, the blondie was born! Using brown sugar instead of white sugar, this dessert has a rich flavor that matches perfectly with pecans. It’s so delicious, I’ll even leave out the chocolate chips!

Pecan Blondie Bars

2 cups brown sugar
2/3 cup butter
2 eggs
2 tsp vanilla
2 cups flour
1 tsp baking powder
1/4 tsp baking soda
1 cup semisweet chocolate chips
1 1/2 cups chopped pecans
Non-stick baking spray

13 x 9 x 2 baking dish
Medium saucepan

Preheat oven to 350 degrees. Grease baking dish and set aside.
In saucepan, heat brown sugar and butter over medium heat, stirring until mixture is smooth. Cool slightly.
Stir in eggs, one at a time – using large flat spoon to combine.
Add vanilla, flour, baking powder, and baking soda.
Mix in 3/4 cup of chocolate chips and 1 cup of pecans to batter.
Pour into baking dish then top with remaining chocolate chips and pecans.
Bake for 20-30 minutes or until tester comes out clean.
Cut into bars once cooled.

Superhero Tip: Substitute any type of nut in place of pecans. Walnuts are delicious and so are almonds!

Second Superhero Tip: Add a handful of mini marshmallows to the top of the blondie for the final 5 minutes of cooking for an extra special treat.
