Breakfast Nachos

INGREDIENTS
1 lb. chorizo sausage, ground
1 medium onion
2 TBSP butter
5 eggs, beaten
1 tsp black pepper
4 tomatoes, chopped
8 oz. tortilla chips
8 oz. Mexican blend shredded cheese
Jalapeno salsa
Sour cream

UTENSILS NEEDED
Frying pan
9×13 casserole dish

Preheat oven to 350 degrees. Layer chips in a casserole dish and set aside.
Cook chorizo on medium heat until brown. Drain and set aside.
Cook onion and butter in pan until onions are translucent. Add eggs and pepper – continue cooking until eggs are no longer runny. Mix in tomatoes.
Layer egg mixture over casserole dish and top with cheese.
Bake for 10 minutes, or until cheese is melted.
Top with salsa and sour cream and serve.

Superhero Tip: I use ground chorizo sausage but if you cannot find it, buying the link version is a fine substitute. Cube the sausage into small pieces before frying.

Second Superhero Tip: Pair this recipe with lime tortilla chips – you won’t regret it.
