It’s hard to eat vegetables as an adult. You’ve made it this many years without broccoli and you don’t have to put up with it in your own home. My house, my rules – isn’t that what our parents told us?! Well guess what, this vegetable is covered in a cheese sauce. Cheese makes vegetables palatable and even delightful if there is enough of it.
Plus you may live to see your grandchildren.
Broccoli and Cheese Casserole
8 cups broccoli
1 small onion, chopped
4 cups shredded cheese
1/2 cup butter
2 TBSP flour
1 1/4 cups milk
9×13 casserole dish
Preheat oven to 325 degrees.
Steam broccoli for about 3 minutes – it should be tender yet firm.
Place broccoli in casserole dish and set aside.
Melt butter in pan on medium heat. Add flour and cook until bubbles form.
Add onion to butter mixture. Slowly add milk, mixing well.
Bring to a boil for 1 minute then remove from heat.
Add cheese and mix well. Salt and pepper to taste.
Pour mixture over broccoli and bake for 30 minutes.
Superhero Tip: Use whatever cheese takes your fancy. I love cheddar with broccoli the best, though some people really love a white cheese. Swiss and provolone are both delicious.
Second Superhero Tip: Want to really sneak in health points? Add cauliflower or carrots to the dish!
