Alright everyone, today’s recipe is going to be a shocker. A shocker I tell you. At least for most Americans…
Pudding doesn’t come in a box.
Let me clarify by saying that it does actually come in a box, available in grocery stores all across the country. However, it can also be made from scratch. That’s right. I only recently learned how many Americans didn’t know that pudding isn’t magic and can be made with common household ingredients. I was telling a friend that my pudding recipe would be posted and she was shocked. She questioned how I could post a recipe that was a box from the store that you mix with milk then serve.
I was hoping she was an outlier, someone truly kitchen clueless.
She was not.
1/4 cup dark cocoa powder
1 cup sugar
3 TBSP cornstarch
1/4 tsp salt
2 1/4 cups milk (skip non-fat types)
2 TBSP butter
1 tsp vanilla extract
Combine cocoa, sugar, cornstarch and salt in saucepan.
Gradually stir in milk while whisking.
Cook on medium, stirring continuously until boiling.
Allow pudding to boil for 1 minute while stirring.
Remove from heat then add butter and vanilla.
Pour into bowls and serve immediately.
Superhero Tip: This tastes even better when cold! Pour into bowl and place plastic wrap directly onto the pudding surface to prevent a skin from forming. Chill for 2 hours and then top with whipped cream before serving.
Second Superhero Tip: If you prefer a milder chocolate flavor, you can substitute regular cocoa powder and drop the sugar to 3/4 cups.
