This is one of those recipes that I had to learn once I had grown up and left my parent’s home. I watched them make these potatoes many times each year, but for some reason the simplicity of it left me wanting to do more. And more. And more. There is such a thing as too much when it comes to decorating a potato.
Roasted Garlic Potatoes
6 thin-skinned potatoes
(any variety with a thin skin)
2 TBSP minced garlic
2 TBSP olive oil
1 tsp salt
1 tsp pepper
Cutting board and knife
Preheat oven to 450 degrees.
Wash potatoes and cube them into bite size pieces.
Combine all ingredients in bowl and mix until potatoes are well coated.
Spread potatoes onto baking sheet in a single layer.
Bake until golden brown, about 30 minutes.
Superhero Tip: Top the potatoes with shredded cheese once cooked and place back in oven until melted. Garnish with sour cream once plated.
Second Superhero Tip: Add virtually any seasonings to your potatoes for a new flavor. Italian seasoning blends, Cajun spices, even steak seasonings!
