As some of you may already know, I am not a huge fan of cooking. While I like to eat, I absolutely loathe the clean up required after a delicious meal. Pots and pans are my nemesis when my belly is full! That’s why I love anything I can create in my slow cooker. Hence, the lazy woman’s version of beef and broccoli. It is very delicious, though obviously not quite as amazing as the version you cook in a wok. However, you can come home to this and throw the pot into the dishwasher after you eat it all.
Beef and Broccoli
1 lb. beef, thinly sliced (top loin cut)
2/3 cup beef broth
1/2 cup soy sauce
3 TBSP brown sugar
2 tsp sesame oil
1 TBSP garlic, minced
4-6 cups broccoli
4 tsp cornstarch
Sesame seeds for garnish (optional)
Lay beef strips in crockpot.
Mix together remaining ingredients in large bowl, leaving out cornstarch and sesame seeds.
Pour mixture into crockpot.
Cook on low for 4.5 hours.
Take 5 TBSP of liquid out of crockpot. Whisk together with cornstarch until smooth.
Return liquid to crockpot.
Add broccoli to crockpot and stir ingredients well.
Cook for additional 30 minutes.
Superhero Tip: Serve over sticky rice.
Second Superhero Tip: Add thinly sliced carrots with the broccoli for an extra serving of vegetables.
