Cheese, chicken, breadcrumbs… see where I’m going with this? It’s a bit of a twist on parmesan chicken, which Hubster deplores due to the addition of said parmesan. Since I adore chicken and cheese combinations, I knew I had to invent something for Hubster to eat with me.
Cheesy Chicken Mozzarella
4 boneless, skinless chicken breasts
16 oz. fresh mozzarella cheese Salt
1 egg, beaten
1 cup flour
2 cups Italian breadcrumbs
9 x 13 baking pan with sides
Preheat oven to 350 degrees. Spray baking pan and set aside.
Place chicken breasts between sheets of parchment paper and pound until they are 1/4 inch thick.
Season each chicken with garlic powder, salt, and pepper.
Place a slice of mozzarella on each chicken, roll chicken to cover, use toothpick to close.
Roll each in flour, egg, then breadcrumbs and place on baking sheet.
Bake for 30-45 minutes.
Top with remaining mozzarella, and bake until cheese melts.
Serve over pasta and sauce.
