Cheese, chicken, breadcrumbs… see where I’m going with this? It’s a bit of a twist on parmesan chicken, which Hubster deplores due to the addition of said parmesan. Since I adore chicken and cheese combinations, I knew I had to invent something for Hubster to eat with me.Recipe

Cheesy Chicken Mozzarella

4 boneless, skinless chicken breasts
16 oz. fresh mozzarella cheese Salt
Garlic powder
1 egg, beaten
1 cup flour
2 cups Italian breadcrumbs
Spaghetti sauce
Spaghetti, cooked
Cooking spray

9 x 13 baking pan with sides
Meat tenderizer
Parchment paper

Preheat oven to 350 degrees. Spray baking pan and set aside.
Place chicken breasts between sheets of parchment paper and pound until they are 1/4 inch thick.
Season each chicken with garlic powder, salt, and pepper.
Place a slice of mozzarella on each chicken, roll chicken to cover, use toothpick to close.
Roll each in flour, egg, then breadcrumbs and place on baking sheet.
Bake for 30-45 minutes.
Top with remaining mozzarella, and bake until cheese melts.
Serve over pasta and sauce.

Superhero Tip: You won’t need any tips because the cheesy goodness makes everything perfect!
