Breakfast is the most important meal of the day, a saying we’ve all heard since childhood. As much as we’d all love the eat bacon and nothing else, it’s probably much healthier to add in another component to help fill you up. I say probably because there are a number of ways you can alter this recipe until you basically end up with candy on a plate at 7am.
1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1 TBSP sugar
1 1/4 cups milk OR buttermilk for rich pancakes
1/4 tsp vanilla extract
3 TBSP butter, melted
Additional butter for pan
Combine flour, baking powder, salt, and sugar in bowl.
Add egg, vanilla, milk, and melted butter, whisking until smooth.
Heat frying pan on medium heat, melt a thin layer of butter where you will be placing pancakes.
Drop pancake batter onto butter and cook until the sides begin to bubble, the center becomes a bit firm, and the bottom is brown.
Flip over and cook until second side is brown.
Superhero Tip: Add chocolate chips to the batter and top finished pancakes with whipped cream.
Second Superhero Tip: Mix in your favorite berries to the batter and top finished pancakes with powdered sugar.
