I have to be honest, I’m not a huge fan of banana bread. I know many people love it, but I’m just not one of them. I do enjoy a slice with milk, but I don’t really want a second slice for the next year. However, I’m handing out this recipe because friends and family love it and baking is all about gifting your magic to the world.

Or just making sure you’re not the only fat kid who had too much cake!

Nutty Banana Bread

1/2 cup butter (room temperature)
1 cup sugar
2 eggs
4 bananas (very ripe, soft)
1 tsp vanilla extract
1/2 cup whole milk
2 1/2 cups flour
1 tsp baking soda
1 tsp salt
1 cup walnuts

Mixer with paddle attachment
Large bowl
Loaf pan 9 x 5 x 3

Preheat oven to 350 degrees. Grease loaf pans.
In large bowl, combine flour, baking soda, and salt. Set aside.
Cream together butter and sugar in mixing bowl.
Add eggs.
Add bananas, vanilla extract, and milk. Mix until smooth.
Add flour mixture, mixing until just moistened.
Add nuts.
Pour batter into loaf pan and bake for 1 hour and 15 minutes, or until toothpick comes out clean.
Cool in loaf pan for 10 minutes before moving the cake onto a wire rack.

Superhero Tip: You can add 1/3 cup of plain yogurt to the recipe for an extra moist cake. Reduce bananas in recipe to 3.

Second Superhero Tip: I like to use a mini bundt cake pan so that I can give these out as gifts. You will need to adjust cooking time and test the cake to ensure it is baked completely.
