I am drooling as I write this recipe. This cake is dense, moist, and requires no frosting to be delicious. A delicious treat to be eaten with coffee or tea, it’s so good I’ve even eaten it for breakfast. Take that, doughnuts!

Chocolate Loaf Cake
INGREDIENTS
3/4 cup butter, room temperature
1 2/3 cup sugar
3 eggs
1 tsp vanilla extract
2 cups flour
2/3 cups dark cocoa powder
1 1/4 tsp baking soda
1 tsp salt
1/4 tsp baking powder
1 1/3 cup water
UTENSILS NEEDED
Mixing bowl and paddle attachment
Large Bowl
2 loaf pans (5.5 X 9)
Preheat oven to 350 degrees.
Grease loaf pans. I use an aerosol baking spray to coat my pans.
Add butter, sugar, eggs, and vanilla extract to the mixing bowl and beat on high-speed for 3 minutes.
In large bowl, mix the flour, cocoa powder, baking soda, salt, and baking powder.
Alternate adding water and flour mixture to the mixing bowl, using a low-speed until ingredients are just combined.
Pour into pans and bake for 30-40 minutes. (I have a convection oven so this may take even longer in a conventional oven. You may need to alter the bake time if using a different pan size.)
Superhero Tip: Add a cup of peanut butter chips and pecans to this recipe for a fun twist.
Second Superhero Tip: Serve with whipped cream or a scoop of vanilla ice cream!
